The Distillery
Highland Park, Kirkwall.
Highland Park has made whisky in Kirkwall since 1798 — our island neighbour, a short walk from the Gauger's Share bond. Part of its maltWhisky made only from malted barley in copper pot stills at a single distillery — a single malt. is still turned by hand on stone floors.
The malt is dried over Orkney peat: heathery, near-treeless, and gentler than Islay's. It smoulders rather than billows — which is why the smoke here arrives as perfume, not bonfire.
